n.v. Gonzalez Byass, Apostoles, Palo Cortado Viejo 30, Jerez-Xérès-Sherry, Spain. (375ml)
This fantastic Solera of aged Sherry was originally developed for Queen Isabel in 1862 and made from Palomino and Pedro Ximenez grapes and fortified with long term cask cellaring. This is pure class and luxury with round layers and subtle character from start to finish, in near perfect balance all the way, but still full of energy and zest. This nectar is rich and focused with orange rind, dried apricots, baked apple and lots of nutty flavors with alined oil, pecan and hazelnut. The Apostoles is a magical Sherry that is fairly dry and tangy, but mouth coating with lovely texture and saline making it wonderful with goat cheese and cured meats, it is a perfect start to a great evening of friends and food, don’t miss this beauty, especially if you are a sherry lover. This is a glorious rare treat, and it’s amber color is very inciting and seductive, but it is the taste that will keep you coming back for more.
